10 minute make-ahead meatballs

Since we were all feeling a bit sick of spaghetti bolognese and burgers I decided to make meatballs. After trying several different recipes some with egg, some with breadcrumbs I came up with this one that really does make the best, easiest, tastiest meatballs ever! Plus I often make them at lunchtime and leave them in the fridge until we are ready to cook in the evening. Easy peasy.

Here’s what you need for the basic meatball recipe:

500g of lean mince beef, one onion grated (this really is the KEY to these meatballs. Grating the onion gives max flavour and no nasty big lumps), 2 crushed garlic cloves and one small egg. Optional oregano or basil.


Mix all the above together. Roll into balls and leave in the fridge until you are ready to cook.

Now if you want to add something extra for the adults I’ve been adding in some chopped mint (yes mint and beef DOES go!!) and a small bit of feta in the middle of each ‘ball’. Leave to set in the fridge and away you go!

The first plain meatball is fantastic lightly fried in a pan and then added to tomatoes and pasta, while option two is great when cooked and then placed on top of a cous cous and vegetable salad with tzatziki πŸ™ŒπŸ»
